Ok I want to have a go at making cider this year.

One problem though is that I haven't got a clue how to, so if anyone has any recipes, tips, methods or anythign really then that would be great.

 

I have stumbled across a big traditional orchard that the owner has said that most of his apples go to waste and that I can have as many as I like, which cider instantly popped into my head, and when I metioned that I might have a go he said he would be more than happy to take some of my hands.

He also gave me permission to ferret on his land and as a reward for catching his that are eating his veg patch which is on the other side of the hedge, he said I can have some honey fresh from his bee-hives.

 

Anyway any help would be appreciated.

I still have 90 pints to get through from last season! ~ But I won't give you advice as we did our sums wrong and now its more like apple wine or sherry... 90pints! :sick:

 

When I was a kid, we used to mash up the apples in a tub with a fence post, and then had a proper apple press (like a small barrel with holes in it and a plate on top that could be screwed down to squeeze all the juice out of the pulp.)

Last year, with no such press, we smashed the apples and filled 3 dustbins with the pulp. Topped up with water, added a wee bit of yeast and left in a boiler room for a week, to get all the flavours and juice into the water. Filtered off the juice, into demi-johns with added sugar and champagne yeast, and air traps. Back in the boiler room, last Autumn and now its lethal and I've tons of the stuff! I'm sure someone on here could help you with quantities and stuff?

I've not made cider on my own but used to help my great uncle with his when I was younger, he was more of a traditionalist and didn't believe in adding extra yeast as there should be plenty on the apple skins in the first place and leaving it in a cool barn to ferment rather somewhere constantly warm. With this method it does take a long time to ferment but the cider undergoes two seperate types of fermentation at different points causing the end product to be a bit more palatable (I forget the specifics of the chemical processes but the information is reasonably easy to find on the net if you're that interested!). If you're serious about making cider you're far better off using a converted hydraulic garage press to do so than any of the hand powered jobbies that some people use, it get's far more juice out of the pulp. I just replied to another thread with a link to a page on the subject so check it out.

 

Also, instead of adding sugar to the apple juice you could try adding some of that honey if you get enough, you can replace sugar in a recipe with honey pretty much weight for weight but it can have quite a big effect on the flavour.

my grandads brother made his cider in the hulls of a fibre glass speed boat just out side off taunton. please dont try this unless you like dead ear wigs ,apple pips ,and bits off fibre glass .mind you it put you in places you diddnt know where places all the best cider freak
