There was a program on the telly a bit back with that chef, Marco whats his face?? He prepared and tried squirrel and nearly chucked his guts up, Strange i thought. As edible as squirrel maybe (and i have tried it ) It is as tough as old boots and has no taste whatsoever. So as for Marco mr top chef puking on squirrel it had to be all in his mind. Or his own cooking. Fry it in olive oil and garlic and or boil it in a good stock, i wouldnt waste my time or money. Just suck on an old piece of inner tube instead. By all means everybody should at least try it, probably nice cooked for 3 days in a good sauce, but the sauce will be all you taste. BlueCoyote 0 Posted December 9, 2008 Report Share Posted December 9, 2008 (edited) i dont know how that chef cooked his squirrel but i've eaten enough of it in my short life and have never once been sick off of it. its tough or tender depending on the age and sex of the squirrel too, like any other animal. i've found the best way to cook it is fry it, smother it in gravy and pour over rice. makes it tender enough. plain old fried squirrel you just end up flossing your teeth with the ligaments, if you even get that far! Its no gourmet dinner and i think its a hoot that people are finding it trendy lol my friends used to make fun of me for hunting squirrels. come to think of it... so did my husband for a while. but he couldnt hide the curiosity. when he finally did get to eat it (fried with gravy and rice) he was neither impressed or disgusted. he had fun hunting them (his first successful hunting trip) and he got to add a new food to the list of weird things he's eaten (Bear, Ostrich, Goose, Rattle Snake, Frog) his other gripe was that it takes too many to make a mess. But we were pressed for time that day so we had to settle for what we got. I know i'll hunt squirrel any chance i get because its fun for me. i dont care if anyone else in the family eats them. the dog and i will enjoy the meal all by ourselves "I never thought I would ever try squirrel, I've tried it and it's ok! Authentic American recipes from a couple of crap Game cookbooks going cheap on Amazon, wish I hadn’t bothered with them. As the Americans are into smoking food it a big way I bought them for that. Complete waste. I shall therefore give you the crappiest recipes I found for Squirrel. Grey Squirrel not the red or fox squirrel they seem to prefer in the North East of the USA. This must be your favourite! Butterflied Grilled Squirrel with Peanut butter dipping sauce. (prep notes are my interpretation) 4 grey Squirrels (prepped and split along the spine) Seasoning in mills Zest and juice of 1Lime ½ cup sherry ½ cup heavy cream ¼ cup creamy peanut butter ¼ cup Chilli sauce ½ cup unsalted butter Prepare a hot fire in the grill. Season Squirrels to taste. Combine the zest and lime juice with the sherry, cream Peanut Butter and chilli sauce in a siacepan. Simmer for 10 minutes. Season and keep warm. Melt the butter in a saucepan and take out to the grill, .baste the squirrels and grill over moderate heat fro 15-20 mins or until meat pulls away from the bone. Serve with individual bowls of the sauce. Crunchy Parmesan Squirrel 3lbs quartered Squirrel Handfull of deep fried onion rings (crushed) ? ¾ cup grated parmesan (hard Italian will do) ¼ cup breadcrumbs 1 tsp Paprika ½ tsp salt 1 egg (beaten) Milk ¼ cup butter (melted) Seasoning Combine Onion, Cheese, Breadcrumbs and seasoning. Dip the quartered Squirrel in the beaten egg and milk, and coat with the cheese mix. Fry is a shallow frying pan with a small amount of water to prevent sticking. Pour melted butter over the fried Squirrel. Bake at 350F for 55-60 mins until tender and golden brown. Enjoy. Quote Link to post Share on other sites
