Yeah, thats a hot smoker. To cold smoke you need to run the smoke through a flue of somekind to cool it so it doesnt cook the food just smokes it. That seems easy but i bet there is a right and a wrong way of making the thing draw properly and a right length of flue etc.

Looks like it might have to be a bit of trial and error!

I am in the process of fine tuning one I made from a four drawer filing cabinet. Take out the drawers and slides. Take the front off the drawers. Cut off the dividers between the top two drawers and the bottom two. Bit if metal at the back and weld two fronts with a cut off divider in the middle and you have two doors made to fit. Three hinges per door. Swivel catch to hold it shut. Predrill and use decent length pop-rivets rathers than self tappers.

Cut a couple of holes at the base and pop-rivet on a closable vent on each. Make sure you can get a good flow of air through the vents. Cut a hole on the top of the cabinet to allow smoke to emerge. I am putting one of those chimney cowl things in the hole purely to make it pretty.

Get some old oven shelves and weld them to the inside of the roof to allow you to hang stuff right at the top, watch out for the vent.

More oven shelves welded together and attached to the slide attachments inside. Use the attachments for the bottom three drawers. Hinge the bottom rack to allow access to the fire or whatever. The top one leave out for hanging space.

I have not put in a smoke spreader but you could put one in on the bottom slider attachments.

Put whatever you want into the bottom to produce heat, smoke etc. You could put in a water bowl if you wanted.

No pics at present as I have kept changing the design and swopping self tappers for pop-rivets. Cocking up the top vent by trying for one with a flow control, Tar from the smoke gummed up the control. Forgot the hanging attachment at the roof. Strengthen the metal holding the doors together. And it is still down at my neighbours waiting for all of the MIG welding to be done. Told him no rush and his old dustbin type smoker still works, smaoke coming out of every rust hole.
