CUBE 0 Posted November 20, 2008 Report Share Posted November 20, 2008 Right Xmas menu's please - I dont really do pressies, a wee special piece for the wife and treats for the kids, but for me the best bit about Xams, aside from not sitting in an office, is the food. There will be smoked and / or salted fish pate, game terrine with homemade bramble chutney, bronze turkey with a'the trimmings............pudd is my weakness...trifle or xmas pudd or cheeses or all???????????????????? then there's is of course champagne, fine wines and maybe even a cheeky dab at some port, followed by chronic indigestion!!!!!!!!!!!!!!!!!!!!! My kids are old enough to have escaped the must have the in thing (both in their thirties now). I have no problem with the Eat , Drink and be Merry. Love it and join in, even make a contribution or two to the table, and provide the odd glass or three. In my family it is traditional to have a full blown meal on Christmas Eve. This year I am providing them with a cold smoked then roasted saddle of venison (coat in dripping, foil, flour paste then Foil) . My usual tatties roasted in goose fat. Roasted Parsnip in parmasan and wholemeal, Purple sprouting Broccoli (steamed). Red Brussel Sprouts (bacon and wine). Theme seems to be red. The kids have always had their pressies under the tree and only a stocking at the end of their bed. It continues. Coffee and bacon rolls the order of the morning. After that it's cold buffet and lots of water. Boxing day it's out to the local hunt for the meet. Back home for curried whatever. There is the another side as I have been estranged from my wife for 18 years when I decided to give up City and move to the country. My partner of now 12 years is quite understanding and gets on well with the kids. I deliver the food, leave their pressie and leave. See them on Boxing day when we take them to the meet and back to my place for some warming grub. Quote Link to post Share on other sites

Come on, you know you want to!! Sounds delicious. We will be having fillets of hot smoked trout for starters and then probably partridge and pheasant with all the trimmings. Pudding will sticky ginger pudding with creme fresh or Christmas pud and brandy butter. Drinking is allowed from 12pm or after the dog has a proper trek to tire him out whichever is first! Homemade bread Goose, if i get out to shoot one this year..they're not on the farm yet...... Tatties, neeps, bread suace, brussells, etc etc Spoil my self with the only bottle of red win a year..A little Chateaux Neuf de Pape.. cheeky.... If it has some flesh attached then take it off and use it for a Curry dish, stick the stripped bones into the big stock pot. Few hours or so of gentle simmering and you have some super "Chicken" stock, into a sealable container and into the freezer. Use wee ones if you don't use lots. doga 50 Posted December 2, 2008 Report Share Posted December 2, 2008 turky this time as we dont usualy have it,home cured bacon with butter under the breast skin of the bird no drying out that way with a cumberland sausage and stuffing filler the usual roast tats roast carrot and parsnips pigs in blanket for me lad carnt forget them lol and its got to be sprouts and probably brockly.mains,starter no chance carnt eat it all,pudding cristmas no doubt.and plenty of hunting over the holiday to get the pounds off ay fatty. Jim Grant 4 Posted December 3, 2008 Report Share Posted December 3, 2008 I was getting a bit worried about the Goose Fat to roast the tatties in. Just can't get under them this year. Job sorted now. I help my elderly neighbour by prepping the fowl she is putting into the Poultry Auction. I get my free range eggs and assorted fowl for my trouble. She was just checking that I would be able to do the same this year. There is a big Chinese Gander going to get the dirty done on him. Getting too aggressive with the Postie. Thats for me along with a Capon and a couple of duck. I just have to get him roasted in time and that should yield a good few jars of prime fat. Favourite Festive Bird the Goose.
