The flavor is taken on by the algae in the water that the trout was grown and not by the water that it was caught in, unless it was in there a long time and then the flavor may be lost a bit or increased a bit depending on the water.As I have said before trout pellets are over 90% effective :sick: so maybe the flavor you are tasting is pellet . I have herd from a couple of sources trout poached in apple juice can eliminate some of the earthy taste, smoking is also good or you could always turn them into fish cakes Quote Link to post Share on other sites

Guest ferret feller Posted November 11, 2008 Report Share Posted November 11, 2008 i caght a one poand streem trout in the local stream in the park and i killed it and took it home for tea first cast aswell but i still regret it to this day as i went back 8 or 9 times and never saw any more so i kind of feel like i killed them off even if it was juts one fish..... grandadbob 0 Posted November 19, 2008 Report Share Posted November 19, 2008 Hiya, Hot smoking is the best way I have found to cook a muddy trout, the key is to salt the fish first by covering the fillets in salt for half and hour before rinsing off. The salting procees draws the moisture and the muddy flavour out of the fish which can then be replaced with the smoky flavour during the hot smoking process. Cornio 0 Posted November 19, 2008 Report Share Posted November 19, 2008 I agree with grandadbob. I always smoke my trout and the taste is superb. Somebody mentioned cleaning them properly, this isn't the case. Of course you should clean them properly, but this won't remove the earthyness. I've also eaten Bream, Carp and Pike in Germany and would recommend that any freshwater fish be smoked. Even Mullet can taste quite earthy, as they go high up estuaries and will sift through silt.
