mattydski 560 Posted October 1, 2008 Report Share Posted October 1, 2008 I wouldn't hang a rabbit, i may keep it in the fridge for a couple of days, but thats all. Remember to gut as quickly as you can as well. The guts have a habbit of tainting the meat quickly IMHO. This can sometimes be seen as a green ting to the skirts if you leave it a bit too long. As for cooking it, as long as possible in a casserole, as you would stewing steak, or boil first for a good while, (1.5hours) then strip the meat to put in a curry for instance, then cook as you would strips of chicken. Sporting Shooter very kindly took me out a few weeks ago and gave me a rabbit that he shot. I didn't hang it, gutted it that night and jointed the whole rabbit and marinated it overnight in the fridge with olive oil, garlic and rosemary. I cooked it the following day slowly in red wine for about 3 hours until it was falling off the bone. It was the best I've ever tasted!! Pops 19 Posted October 3, 2008 Report Share Posted October 3, 2008 brown in olive oil or bacon grease then put in a pot or deep baking dish w/garlic, oregano, basil, cilantro, olives, tomatoes and dried chili peppers (like the kind they sell on strings not the little hot things) that have been soaked & blenderized (if you have to you can substitute canned enchilada sauce). let it stew or bake until the meat pulls easily from the bone. take off the heat. remove meat w/slotted spoon and pull from bone (or not if your okay w/ it, my wife isn't). taste the sauce if it's too spicy soften w/ sour cream or cream cheese. sauce goes on meat. serve w/ rice, black beans, fried plantain (the banana looking thing), fresh hot tortillas and horchata. masmiffy 82 Posted October 4, 2008 Report Share Posted October 4, 2008 Wouldnt hang rabbit myself. My dear old great aunt always skinned jointed asap and put it in salt water in fridge overnight. She then made rabbit pie with a bit of pork belly in it was lovely but I aint got the recipie it went to her grave with her I have done em in slow cooker and its great seems to 'bleach' the meat comes out nice and white.
