Edgar 1
Hi, haunches from older deer are good if marinaded in the fridge overnight with wine and herbs. Then roasted. The marinading is probably not necessary for a calf.

Guest boysfaetheblackstuff
some good desicitions there .. prefer it cooked on the bone coverd with rashers of bacon to hold the flavour... not forgetting peirce the leg with a knife and put some garlic cloves before coverin it with the bacon... the taste is phneoimal... slow cook in the oven for about 2-3 hours... yoggerman 5
my favourite way is to rub the leg with butter , cover in streaky bacon bacon and a little bit of italian herb seasoning,, place it in a baking tray and pour over a pint of chicken gravy <make the gravy more watery than u normaly would> cover in foil and every cook on medium for about 2 - 3 hours depending on size ,, every 15 or 20 minutes take it out of the oven pull back the foil and ladel the gravy all over it... for the last 20 minutes remove the foil to crisp up the bacon,,, i like eating mine with creamy mushroom strogonoff sauce which comes in a packet and you just stir in to hot milk
