i had some italian and american import neopolitan mastiffs years ago that were cropped, done in different styles and lengths depending on which region of the country they came from. they're done at a few weeks old, cut to shape and then sewn up around the edges.

for any working dog - fighting, hog dog, guard dog - its a risk to have ears because the prey/opponent/bad guy could grab the dog by the ear and cause serious damage.

i wont judge a person by their dogs ears because its either for working purposes/sporting/or looks. one of my favourite breeds is the Doberman but i have to admit i like them better with cropped ears. i wouldnt pay to have it done.... but i wouldnt over look a dog just because of its ears. i like the doberman personality, but do like the sharp/alert look on the cropped dogs. i've owned several dobermans in my life and only one had cropped ears. everyone was scared to death of him. he looked vicious! but he was harmless... it was the springer spaniel we had that would rip your ass off. you didnt get out of your car if "Fred" was loose.
