Hi folks

I was inspired after watching a cook on the wild side, where hugh fernely whittingstall featured a birch wine making clip, to have a go at making some myself.

now the lad who was showing hugh how to do it said it must be sapped in early spring with us being a bit further north i take it this would be later in spring ??

the daffodils are just starting to open here and the blackthorn tree's in my front garden are just starting to bud....am i too late ?

does anyone here make birch wine and does anyone have any tips for a first timer ??

thanks in advance

Ricky
