I get a bit of inspiration from the Pit Boss Site, on the recipes tab there’s some good stuff on there not just your usual meat cooks.

You can make your burnt ends more savoury...no rules...UK brisket isn't the same as the yank steroid stuff lol,  I like beef ribs but they can be very rich , just a  chicken takes some beating, beef shank tacos is my new thing ? ?

 

....beef shank cost me 18 quid and by far the most delicious easy eating thing I've made so far.

How much is a kilo of pork ribs over there? I pay about 4-5€ per KG and always good quality meat/amount to bone.

Nice one I bet she holds temperature well and steady being that thick....all credit to those who use stick burners,  keeping a fire right for 15+  hours is a art in itself  total dedication ??

Those ones were £20 each very meaty, the cheap racks with little meat were £8 each

Jesus!

A lot cheaper here for meat. Only issue for me here is the lamb legs are always small.

Fair enough if it’s not commercial bred. I sometimes pay more for grass fed/free range etc ;)

My Son had this one made by Meat City Smokers up in Yorkshire it’s very heavy and similar to yours can’t remember if it’s 6mm or more I will ask him but it’s got a hell of a smoke box on it with reverse baffles inside.
