Yeah hot smoked I had it running on smoke setting 80ish°c for around a hour but had to crank it up a bit towards the end as we had somewhere to be , next time I'll let it run just on smoke for duration until I get to the desired 53°c internal temp it'll probably be close to 2 hours, im planning on doing some cold smoking once the cold weather comes 1 Quote Link to post Share on other sites
