I've been at the pit myself... we got the wife's sister stopping over ,we was supposed to be having a shin of beef joint but the wife fukt the order dates up so I had to run into town first thing this morning for a last minute stand in ,picked up a nice rib of beef and it turned out to be a happy mistake, the best bit of beef I've had for a while, smoked for nearly 5 hours at 80°c and reverse seared, I didn't even get the money shot I was so excited 10 1 Quote Link to post Share on other sites
