Rabbit Pie ! And, for the purists, made with shortcrust pastry, NOT puff pastry ! ? ! Cheers.

Treat off my dad tonight, he's a friend on the fresh fish stall up town... Scallops and lemon sole fillets...

Family get together at ours, so a bit of a spread.. 13 hour cooked brisket, slow cooked pork shoulder.. Home made coleslaw, stuffing, roasties... and a 2 day hangover! Lol

Do you realise how long it is since I had a corned beef pie?Top scran Stav,north-east comfort food,i would love a bit of that.

They brandy ones are actually all for one customer and yeah on the mixer. And ratio wise it's just a case of keep adding and trying till it feels right. Am home now from work this morning , but got an outside catering event tonight to do  , then back in work tomorrow to prep and back in tomorrow at midnight ish to do all night till Monday afternoon.  It's our crazyist week of the year.

I never eat mince pies with brandy,I don't drink and alcohol so I always had a crazy notion that a couple of pies would get me totally pissed,a frightening thought,I just imagined a baker tipping a bottle into the mix.

Tbh I like a drink but I don't like any alcohol in food, I don't even like steak and ale pie for that reason. And I haven't eaten a full mince pie for years as I literally get sick of the site of them lol.

I lather salt on before cooking , but if I'm doing honey roasted I don't do crackling , soft fat lathered in honey and English mustard

I cut the skin back, cover the whole thing (not the skin) in honey etc and put the skin back and secure with cocktail sticks… best of both worlds ;) 

It just someone was telling me to salt the skin 24hours before cooking to draw out the moisture and get really crispy crackling.
