Rabbit Pie ! And, for the purists, made with shortcrust pastry, NOT puff pastry ! ? ! Cheers.

Treat off my dad tonight, he's a friend on the fresh fish stall up town... Scallops and lemon sole fillets...

Family get together at ours, so a bit of a spread.. 13 hour cooked brisket, slow cooked pork shoulder.. Home made coleslaw, stuffing, roasties... and a 2 day hangover! Lol

Anyone ever made their own crispy duck? Got a couple in the freezer I'm tempted to have a try with.

Yes it’s not easy but if you get it right it’s banging. Make sure you separate the skin from the meat and have your basting marinade all prepped. Loads of videos on YouTube ;)

what proportion crumb/rusk did you use mel ?

We didn't add any , except what was in the sausages .

It's was around 4kg of pheasant breast , 8 large chilli sausages , two onions , salt and pepper.

Minced it all together , then made 250g burgers .

It was just an experiment really , but they tasted absolutely fantastic.

They were equal to any burgers made with beef or lamb that I've ever tasted.

Mine went on a large crusty cob , with a bed of spinach , then topped with castello tickler, extra mature Devonshire cheddar, a large mushroom,  and a dollop of garlic mayo.

It was even better than I expected to be honest , and we'll definitely be doing it again . We also did some with smoked bacon. Well be trying those in the week.
