Rabbit Pie ! And, for the purists, made with shortcrust pastry, NOT puff pastry ! ? ! Cheers.

Treat off my dad tonight, he's a friend on the fresh fish stall up town... Scallops and lemon sole fillets...

Family get together at ours, so a bit of a spread.. 13 hour cooked brisket, slow cooked pork shoulder.. Home made coleslaw, stuffing, roasties... and a 2 day hangover! Lol

Spoilt rotten last night!

We have guests staying in the cottages, down from Liverpool, this is their 3rd trip in less than 12 months and they are real decent people... he is a bbq chef and she has a bakery...this time he brought his butcher who supplies him for events...

They asked if they could cook for us in the cottage last night...um yes please!... he brought his egg bbq and another type of smoker...

Well it was amazing... 2 types of steak, pork belly, I caught some rabbits yesterday and skinned 3 for them they put the legs in some type of rub and bbq them.. they cooked for us last time but this was even better...hes got loads of bookings for events, I'm thinking about doing one here with him...it is amazing grub!

The steak was from Finnish cattle that have won best steak for the last 3 years...(can't remember the name)

Oh and she brought me 3 sticky toffee pudding and toffee sauce...my favourite and I'm not just saying it this is the best I've had... Great night, great food and company

I was talking to a really good chef and he said he's more than happy to do a steak well done. Everyone has different versions of how they like their steak and how they would describe it....you can't fck up well done.....it's just well done. A decent piece of steak, even well done is still a decent piece of steak, with different flavours being brought out the more you cook it, it doesn't always automatically go chewy. But when people ask for the various versions of medium/rare etc not only does it show up a less good steak, which happens sometimes even from a good butcher, your always at the mercy of how the customer wanted it doing.

I agree that everyone likes it a different way, I dont agree that cooking a good piece of steak well done is not f***ing it up  however, it dries the meat out imo... Good steak should be medium at a push but no more imo.. rib eye for instance needs to be cooked more than a fillet as it has more fat running through it, so you need to cook it through to get the best flavours, medium would be my choice for a rib eye..

The steak last night was cooked on the bone, so you have it all the same, I suppose you could put your slice back on the heat of you want to cook it more...

As long as the steak is well rested and you don't have blood running into your plate...

My Mrs was a well done type when we met...not anymore though... I do get why visually some people are put off by rarer steaks.. id eat it raw personally so don't bother me lol

Ha that would be good!

Would probably cost us the sane amount as we make for charity to have him down and cook/supply meat!

Mind you Dan the man supplies amazing meat every year...you just have to put up with me and Sean cooking it! Lol
