Keith a Spatchcock chicken is its cut down the back and opened up to make it flat. Stand it on it's neck end on a cutting board and cut down beside the parsons nose right down it's back to the neck. then open it up and press down to sort of flatten it mate. Cooks a lot quicker and the breast meat stays lovely and moist.

I roast it in a large tray on a bed of a sliced carrot, Onions, garlic maybe leek as well with chicken stock or water.

By the way mate little tip I always save all the bones and skin boil to make stock for next time freeze it in a Chinese take away container.

Treat off my dad tonight, he's a friend on the fresh fish stall up town... Scallops and lemon sole fillets...

Family get together at ours, so a bit of a spread.. 13 hour cooked brisket, slow cooked pork shoulder.. Home made coleslaw, stuffing, roasties... and a 2 day hangover! Lol

  Thanks for taking the time to answer me Arry, think ive said this before, but until my damn stroke  i  wasnt to bad in the kitchen department myself, but now, i dunno what goes were

You could do that one Keith it's real easy one and comes out a treat. Bit of veg some roasties, nice meal and enough for sarnies a curry or stew as well.

  thanks Arry ,  i cant grumble food wise, my daughter came down yesterday with a roast beef dinner, there was loads of it, all i had to do was some gravy,

Home grown onions with sultanas and chicken curry 

Trying this sauce as Chinese cash and carry had ran out of extra hot Maysan 

Also they aren't doing the small bags of lucky boat noodles, Chinese Doris said you have to buy the whole f**k off box load 

What does she think I am a take away?
