Expand It more like cartilage than bone mate and the flesh sits on the top, you just scrape it off either side. Expand Like you say mate rays are a type of shark and its all cartilage, not bone... dogfish/rock salmon (in the chippy) has one long cartridge running through it, no rib cage just a mini shark... if you can be asked to skin em they are good eating..
