I've got an orchard of plum trees and I'm keen to find a use for them as they don't keep well She makes it in 5 gallon batches 17 lb Damsons 12 lb Sugar 2 lb Raisons Stone Damsons Freeze for a Week Put in straining bag and Mash Boil half water and dissolve Sugar pour over fruit Add 1 Campden Tablet Stir then leave 12 Hours Add the rest of the Water to bring Temp ,Down to 20 dig C. the Acid Blend ,Pectic enzyme and yeast nutrient.....stir well and leave 12 hours add red Wine yeast leave to ferment 10 days stirring each day take out straining bag and squeeze back into the liquor Fit Airlock and leave to clear , ours took 3 months , Bottle and then drink when ever you want This is a simple Cottage recipe that my Mrs uses for most Fruit Wine Quote Link to post Share on other sites
