Greyman 28,404 Posted April 10, 2020 Report Share Posted April 10, 2020 Well today’s cooking adventure will be made out of some left over pork belly I did a couple of days ago and the remains of the chicken from yesterday, and today I will mostly be making chimichangas, it’s a flatbread wrap of pulled meat and cheese deep fried, seems a thing in the states but I’ve never seen them done over here so watch this space photos to follow 1 Quote Link to post Share on other sites

Good question mate, this might not work....... I’ve just used some granite stones I had. I got a good fire going on them with plenty of wood at 7 this morning & pulled them out a few hours later. Greyman 28,404 Posted April 10, 2020 Report Share Posted April 10, 2020 Ok chimichanga prepped, pulled pork, pulled chicken with grated cheddar and motsarella cheese with a block of cheddar cheese on top ( use whatever cheeses you like ) it’s important to fold them without leaving gaps because during the frying process you want to heat and melt the cheese and crisp the outside up without to much fat getting inside, part three to follow unless they are so nice I get carried away and eat them before I get a picture 7 Quote Link to post Share on other sites

Then this afternoon a little BBQ for me and the wife waiting for the big one tomorrow I’ve got a nice bit of brisket covered in a home made rub waiting to go in my smoker. Here’s a piece covered in my home made rub ready for an early start in the smoker in the morning. It’s a Great bit of kit Odin you can use it as a BBQ you can hang meat in and you can do two cooks at the same time as it has two grills and there’s a water pan as big as a washing up bowl that permeates moisture into the meat, half way through the cook I will put Whisky chips in there and that gives good flavour and a nice smoke Halo on the meat here’s a couple of pics of last year some Beef Ribs see the halo lol I love it.
