We also had roasted pumpkin seeds, pumpkin bread and pumpkin pie. Think I may have overdone the pumpkin theme :sick: :sick: Quote Link to post Share on other sites
Guest brindle Posted November 10, 2005 Report Share Posted November 10, 2005 PUMPKIN SCONES Mix in a mixmaster, 1 tablespoon of soft butter, 1/2 a cup of sugar, 1/4 teaspoon of salt, add 1 egg, 1 cup of mashed pumpkin. When mixed fold in 2 cups of S.R. flour,(if the mix is to stiff add a little milk), Cook for 15 to 20 minutes in a hot oven. PUMPKIN PIE Line 2 pie plates with shortcrust and chill. Beat together 3 eggs, 1 cup of brown sugar, 1 1/2 cups of milk, 1 dessertspoon of Angustura Bitters, 2 cups of strained cooked pumpkin, 1/4 teaspoon each of Cinnamon,Nutmeg and Ginger, pour into pie crusts & and sprinkle top with cinnamon. Bake at 425F(220C) till filling is set,approx 3/4 hour. Serve warm or cold. Quote Link to post Share on other sites
