Jonjon79 13,358
I popped out to the butchers this morning for a nice bit of Topside for tomorrows dinner - while I was there, I asked if they had any pig skin ( I've been fancying homemade crackling for days). It turns out that they don't do anything with it so, it all gets binned but, because I was shopping, they cut me some off and, didn't even charge me for it He asked 'Do you want the fat taken off?' .......... Hell no - that's the best bit. So, I got it home, cut it up and, deep fried it in olive oil - it was crispy on the outside and, soft and warm in the middle. The fat was full of flavour - no need for salt, just a little apple sauce I guess it's just not a popular thing to cook anymore or, maybe most just don't bother.

Greyman 28,559
, you should try chicken hearts if you like a bit of cheap ofal , they are absolutely lovely and cost a couple of penny,s for a kilo, younger people don't see a link between meat and animals just things in cling film or packets are food, not skin, tongues and internal organs, everything tastes better when it's free or cheap and you make it yourself, enjoy your pork scratching,s
