shovel leaner 7,650 Posted July 5, 2017 Report Share Posted July 5, 2017 I thought I might have left it too late , but I went to the tree I usually get them from and cut into a walnut with my knife and the shell hadn't formed. Late June is best but they are still ok . Got them home and washed them and pricked them with a fork " wear gloves " your hands will be black for ages . Then I put them in a bucket of salty water "brine . I will leave them to soak in that for a week or so , then on a sunny day I spread them out to dry and go black in sun . They are then ready to put into jars and cover with vinigar . I usually put a bit of allspice and pepper corns in . There are a few recipes on the net , if you've never tried them , give them a go , I love them but they are an acquired taste . But (and I love both h walnuts and pickles) I have never been able to even chew a pickled walnut. It's mainly a texture thing. shovel leaner 7,650 Posted July 5, 2017 Author Report Share Posted July 5, 2017 I wouldn't even say they are like marmite "love them or hate them " as all my family hate them and I only know a couple of old fart beaters that will eat them . It's a very old English traditional thing , I can't describe the taste but cut a green walnut in half and smell it . It's got a slightly woody floral scent and then imagine that with Vinigar. If you feel resistance then it probably means the shell is forming . But if it goes in easily then you will be ok , try the test on a few places on the walnut and try a couple , just to be sure . 2 Quote Link to post Share on other sites

shovel leaner 7,650 Posted July 19, 2017 Author Report Share Posted July 19, 2017 Walnuts have now been removed from the brine , rinsed and put out on trays to dry off outside . You can see they go black . I've put them into jars and have made a spiced vinegar, it's got peppercorns, ginger , allspice , cinnamon, sugar , a few cloves . Simmered for a while left to cool then poured into the jars ...job done . Should be good in a couple of months . 1 Quote Link to post Share on other sites
