When we got back, we cut them into 1 inch pieces ready for cooking and jellying. I swear each piece had a life of its own which apparently is due the numerous nerves in an eels spine. Just a comment. When i drop a crab into the pan, or gut/ prepare a fish, I'm def not doing it for 'theatre' or 'spectacle' and would always want to be causing least poss suffering to the creature.
