Stuffed Marrow.

Well the first one of the year. Medium sized marrow. Wok. Virgin olive oil. All ingredients from the allotment. Onion finely chopped. Garlic, 3 cloves crushed. 2 hot chillies. 1 red sweet chilli and 1 sweet green chilli. I cooked them for about 20 mins adding salt and black pepper then some sweet chilli sauce. Added the beef mince and cooked for another 30 mins. Cupful of rice boiled till nearly dry and then mix the whole lot. About 20 mins is good. Split the marrow and hollow out, bit like a canoe. Pack the mix in , brush with olive oil and wrap in tinfoil. Put in a Bain-Marie and cook at 200 for 40/45 mins. This dish is magnificent with a good quality white wine and of course good company.
