Mister Gain 1,764 Posted August 21, 2016 Report Share Posted August 21, 2016 Following on from the courgette pie thread, my mate is getting plenty of blue kale this year and bought some over for me. I made a Kale flan/quiche and a mega sized kale pasty. Kale had the stems removed (wife don't like them) and blanched in salted boiling water for 2 mins then strained and finely chopped. Half a small onion finely chopped and 4 small plumb tomatoes quartered. All sweated down in a TBS of olive oil. Chopped fresh sage and thyme added, and allowed to cool. Blind baked a pastry case. Custard made with 4 eggs, dash of milk, and a good handful of grated cheddar, salt and black pepper. (with hindsight it needed a bit more S&P IMO) Mix the lot together and pour into case and grate some more cheese over the top and bake till set. Very nice but I think it would be improved with the addition of chopped bacon. Excuse the poor photo, taken with my outdated nokia. 2 Quote Link to post Share on other sites
