To carry on. The batch I've just put in the oven 48, i've used venison cuts from the thing that was left in my porch LOL. My butcher thinks I'm mad, as do lots of folks, but the end result is what counts. Traditional faggots are great but with a twist they are even better. Also, unlike the butcher, I can play around with herbs etc to make something totally different.

This batch. 4lbs belly pork. 2ilbs pigs liver. 2lbs venison (not rubbish) 1 larges kelsie onion, 4 large leeks. half a loaf of bread. Salt, black pepper, generous amount of sage, pinch of rosemerry and a pinch of mixed herbs. Give it all a jolly good smashing in the blender (in stages of course) then get your hands mucky. Bloody brilliant.

Well that was nice. Deer delivered last night and today liver with an onion mash with black pepper and basil. Nice glass of homemade Elderflower wine. Follow that little beauty. Sorry Beam, couldn't be bothered with fancy pics. Needed to eat.LOL. The pies are pheasant done with onion, red chilli, potato and Stilton with black pepper, salt, basil, mustard seed and a sweet chilli sauce.

No mate in the Midlands we don't seem to anymore. mtp. Used to but to be fair we can only get synthetic versions.

 

Caul fat is hard to come by nowadays, don't know why as all pigs have it. Used to try the butchers but they never had it and half of them didn't even know what it was. Only place I found that did it was one of those turkish food centres, and the price of it was astronomical for what it is. Must admit that it does add a nice skin to the faggots, but only bought it the once.

Well I said I was going to do some rabbit faggots so here they are. I'll put up my recipe first and then photos to follow.

Rabbit Faggots. (My take).

6 pairs rabbit back legs (loins already in pies) LOL Approx 100gms.

Pigs liver approx 75 gms

Belly port approx 75 gms

1 large onion.

3 sticks celery.

1 large leek

approx 1 pint stale bread crumbs.

An egg.

Pinch of the following : mustard seed/parsley/basil/Rosemary/ and a good dose of sage.

Salt and black pepper.

Now to be fair there must be technical terms but I just work on the theory of blitzing it all in the blender to make a nice thick mix. Then it,s only a matter of forming tennis ball size faggots, into trays, oven preheated at 165 for 45 mins. Enjoy.

Whilst waiting for the faggots to cook I dressed these woodies for the butcher. Better than presenting him with a bowl of breast meat I think

You could just crown the pigeon quicker than plucking and looks just as nice.

Jok's faggotsbang on mate met him Friday gone to pick ferret up & he made me feel very welcome so anyways I left with a couple of bags of goodies from his freezer, can't wait to drop his way again thanks jok you a gent atb Flacko
