same weight of blackberries to that of sugar. We use ordinary granulated sugar.

 

Blitz blackberries

add to pan with same weight of sugar

add a knob of butter

Add a tablespoon of lemon juice per pound of blackberries

bring to boil then leave on a rolling boil for 5 minutes or so.

 

check for set by dropping a teaspoon full onto a cold saucer and bang it in the fridge for 2 mins.

 

if set is good , turn off the heat and ladle into sterilised jars.
