Dewclaw69 484 Posted October 9, 2015 Report Share Posted October 9, 2015 same weight of blackberries to that of sugar. We use ordinary granulated sugar. Blitz blackberries add to pan with same weight of sugar add a knob of butter Add a tablespoon of lemon juice per pound of blackberries bring to boil then leave on a rolling boil for 5 minutes or so. check for set by dropping a teaspoon full onto a cold saucer and bang it in the fridge for 2 mins. if set is good , turn off the heat and ladle into sterilised jars. jonnie bravo 572 Posted October 9, 2015 Report Share Posted October 9, 2015 As above same weight of fruit to sugar, but we use jam sugar it never fails to set but it's not the cheapest option.
