Was on the wild gourmets section on channel fours website and came across this rather mouth watering recipie :thumbs:

Feeds 4-6

 

 

Ingredients

  • 2–3 squirrel (or 2 chicken breasts or 300–400g pork tenderloin)
  • 1 tablespoon fish sauce or soy sauce
  • 50g arrowroot
  • vegetable oil, for frying

For the spiced salt

  • 1 teaspoon fennel seeds
  • 1 teaspoon allspice
  • 1 blade of mace
  • 75g salt
  • 1 teaspoon finely chopped thyme or sage leaves (optional)

1. To make the spiced salt, using a pestle and mortar grind all the spices into a fine powder and mix this into the salt with the herbs (if using).

 

2. Take the meat off the squirrel and cut it into thin slivers. Toss the meat in the fish or soy sauce and then in the arrowroot.

 

3. Heat the oil in a large deep pan over a high heat until it is shimmering. Test the heat by touching the oil with a piece of meat. If it sizzles, the oil is hot enough to fry the squirrel. Do this in small batches, so that the pieces do not crowd the pan and thus bring down the temperature of the oil.

 

4. When the squirrel has turned crispy and golden, remove it with a slotted spoon and drain on some kitchen paper. Sprinkle the spiced salt over it and serve.

im gonna give that a go before the weekend fcuk it keep thinking should i /shouldnt i but why the heck not there falling of trees about here there are that many lol .

 

has anyone eatn them after they have already had them because they were good ? any other ways to do them that anyone has actualy had ?

At frampton game fair this year i tried Squirrel and mango chutney in pita bread that was lovely :thumbs:

was just wondering cz im gonna give it a go going to try and get out with the gun realy early tmz so ill post a step bye step picture guide i would do a video but wouldnt be able to post it as i dont know how .

I HAD ONE AT FRAMPTON AS WELL NOT MUCH MEAT IN THAT PITTA BREAD BUT IT TASTED GOOD

They are not bad, i've eaten quite a few. Avoid the old bucks as they are chewy and dont taste that good but young ones are good. i just treated them like rabbit. Also be sure to skin them asap as once they are cold they are a hassle.

 

Havent had one in ages as most of my current permission is mostly fields and not much woodland. i have to admit i miss shooting them more than i miss eating them though!!! :whistling:
