Make sure you know how the horse died.

A horse that's been shot is OK but when a horse is killed by an overdose of anesthetic enough is used to kill over 20 dogs.

Good high protein, but not a lot of fat in most of the meat,if you can, try to get the cheeks.

 

same as with beef, the cheeks have a good fat content for hard work.
