5 Minute Walk Around

I went off for a quick walk about with my air rifle looking for some pigeons, but I came across a pair of grey squirrels in a tree. Shot one in the lungs just shy of the heart, the other one did the sensible thing and ran off up into a tall pine and disappeared. The first one dropped straight out of the tree but as I missed the heart and he still had a tiny bit of life left in him so I shot him in the top of the head just to be sure. Also does anybody know what squirrel tastes like?

They taste great, somewhere between rabbit and duck flavour wise.best cooked in Chinese duck recipes or coat the back legs in crispy crumb and deep fried KFC stylee.

They are a pig to skin if you leave them too cool down but if you can do them straight away it's a lot easier. Personally I gut them then cut the skin across the shoulder blades so you've a tshirt and trousers to remove, as it were. Just rip the bottom half off as there's no meat to speak of above the saddle.

Meat by itself is always one of them, depends on how you cook it. However, if you marinade it or cook it with sauces, it helps it to be more palatable for the first time.

 

Never had squirrel I've caught myself but it's not too far from chicken in texture and a game taste, from what I can remember.
