Odd request but if you really want one why not get intouch with a game dealer or deer park.

My dogs love the rib cage, bones and trimmings of roe I shoot but would not waste a whole deer on them unless it was RTA.

+1 Bart, fish heads and skin and bones, off the deer they get the ribcages and any trimmings go into a big bag for them, give them a leg for a chew also.....but the fillets, shoulders and haunches, eh naw! Thats for me!!!

You're only 25 miles from Melton. Try Melton Market. I'm pretty sure you can buy larder prepped carcasses from their. Though I haven't been in years.

 

If you're willing to pay the market price then just go straight to the market place, simplest way about it I would say.
