Yet within 4 days it made a good sweet dry cure bacon. I used the salad crisper box in the fridge and emptied it twice a day. I cut the belly into three pieces and rotated them over three days, 123, 231,312 the only thing is, I do not like a lot of salt so I used to soak the slices for a couple of hours to take most of the salt out of them.
