Rabbit In Mulled Wine

Had this for the second time over the weekend.

 

I used two rabbits, sat them in salted water overnight, wash the salt water away, boil for two hours next day. Take rabbit meat off the bone (that's how I prefer)

 

Fry an onion with butter, add pepper (optional), add rabbit meat, add plentiful amount of quality mulled wine, let it simmer and reduce, add a beef oxo cube (for colour mostly) and a little flour to thicken towards the end of cooking,

 

Delicious, and even better to take to work and reheat the next day
