first one of the autumn

Well here we go, first one this year.

take a pound and a half of venison, cube it up, - shoulder is ok - then add two large onions roughly chopped.

put into a large saucepan with a fair dollop of good olive oil and sizzle until the onions are soft.

then add a chopped chilli - bigger the better- some fresh ginger - sliced - a good shake of Oregano, basil, and a bay leaf or two, dried herbs are fine.

The add carrots, half a sliced cabbage, and maybe turnip - swede etc - whatever you fancy or is laying around

then top up with half a bottle of decent red wine - preferably not beaujolais - put the lid on and simmer very gently for an hour.

then take enough stock -chicken,beef or pork is all ok - to cover the meat and veg and top up, then add some small potatoes new or old but keep the skins on ( dirt is optional !) put the lid back on and simmer until the potatoes are cooked.

 

tastes good, warms you up, and dont cost much :pardon:
