Rabbit Vindaloo And Stew

Vindaloo ,, is to hot for my tastes..

 

An easy quik cheat rabbit stew is very simple,,,and very tasty .

 

Chop stock veg in a pot,, carrot,, onion,, leak,, rabbit portions,,,

 

Now the cheat stuff,,, colmans chicken casserole ,, comes as a powder in a packet,, ad water ,, also a stock cube,, and some dried herbs,,, I used basil, tyme and mixed herbs,, about a teaspoon each,,,

 

The water should come above all meat and veg,,, cook for 2 hours,, in the oven ,,,after the 2 hours take the meat out,, remove the bones and put meat back in and also the chopped potatoes,, cook for another 45 mins...

 

Try it you won't be disappointed. ,,,if there's loads left,,, get some pastry and put it in a pie

when you say chopped potatoes, are you slicing them and putting them on top of casserole while in oven or just normal?

No not sliced,, just chopped in to equal sized pieces,, by the looks of that bowl,, I think you done it,

 

The more you cook it gently the more the sauce reduces,, and the flavour intensifies ,,, you also don't want it to runny for a pie,,,you need a happy medium...

 

There's a few other vedges you can put in ,,,celery ,, turnip/ swede ,,,,but I prefer sweet potatoe instead of turnip,,

 

Looks nice that joe,,, did you follow my recipe ,, what did you think

close enough mate, i did boil the rabbit first then remove meat and added it all to oven, was abit much sauce that way, maybe if it was in oven longer... can only see couple the top bits from cooking in oven. was still good, plenty time to perfect it, will be trying it again. cheers

 

 

edit: having some of this now to help soak up the beer ill be starting on soon. not quite a pie, close enough.. good scran. cheers
