Different Squirrel Ideas?

Local butcher just started selling squirrel again. I love it but does anyone have any different recipes other than stews etc? Ive found some wonderful ideas on here since joining so figured was worth asking. Cheers :thumbs:

Tree rat nuggets mate.

 

Chop up your meat.

 

Mix some flour, with cayenne and black pepper, maybe some chill powder.

 

Break an egg and give it a wizz with a fork.

 

Dip your meat pieces in the egg and then roll in the flour.

 

Chuck them in the fryer.

 

Or make marinated tree rat pieces - joint them, and chuck the pieces in a plastic bag, with a load of honey and soy, honey and chilli or honey and lemon. Give it a good shake so it all gets well covered and then leave it in the fridge over night. BBQ, grill or fry them. . . . . they taste great.

 

It also goes pretty well in a stir fry.

the biggest problem with squirrel is they don't like parting with there skin but if you're buying them from the butcher (why?) that should be done for you. i've done the squirrel stew thing which was fine but there is a lot of sinew/catilege in the back legs. last time i wraped the sadle & back legs in foil seasoned with black pepper sea salt & as much olive oil as you can get in cook in the oven keep an eye on it, the meat will fall of the bone.you can then do what you like with it, i made it into a pasta dish.bon appetite
