Tiercel 6,986
So far I have been a busy little old man, I have made pickled onions beetroot and cabbage. Runner bean chutney, sweet picalilly and beetroot chutney. I went to make some branston pickle but with the amount of ingredients that go into it you could buy 20 jars of the stuff. Anyone else made anything? TC

Tiercel 6,986
I make a simplified version of beetroot chutney. 1.5 kilos peeled beetroot diced or pulsed in a blender. 2 medium cooking apples peeled cored and diced small 2 medium onions diced small 300g of sugar brown or white 1pint of malt vinegar white or brown 1 teaspoon of ground ginger 1 teaspoon of salt. Just place all the ingredients in a large pan, bring to the boil then simmer with the lid off till it starts thickening. Or till you can draw a wooden spoon through the mixture and the grove it makes stay for a little while. One importent part is the jars have to be sterile put them in the oven @ 130c for 20 minutes and don't for get the lids I put those in a saucepan of boiling water and pull one out as needed. The ingredients are not set in stone you can add anything that takes your fancy really. Edited to add: Cooked beetroot is 44p for 500g in Aldis at the moment.
