bullmastiff 615 Posted September 2, 2007 Report Share Posted September 2, 2007 (edited) Missus said she wasn't going to eat when she got back from work so thought I'd have a play in the kitchen (if it goes wrong she won't be wingeing at me!!!) Ingrediants: 1 rabbit, should serve two-three (or just me, depends on your appetite!) 2 slices of smoked back bacon cut into small strips (4 of streaky) 1 large beef Tomato chopped finely or a large tin of chopped tomato's, 1 large breakfast mushroom (or a few closed cup) 1 large clove of Garlic crushed and chopped (or use the dried stuff), 1 Red pepper deseeded then roughly chopped, 1 onion roughly chopped, 1/2 pint red wine (any old stuff you've got left over or a good excuse to open another!), Bouquet Garni (can be bought from any supermarket, looks like a tea bag full of herbs), Good squeeze on the Tomato sauce bottle, Splash of worcester sauce, 1/2 - 1 tsp of paprika (depends on your taste), Salt and Pepper (more than you think of each) Oil to fry. (I used Olive oil) Do all the chopping and slicing first then it's pretty much just a case of throwing it all together! De-bone your rabbit and slice all the meat into small chunks. then put it in the hot oil in a pan with the bacon to brown quickly on the highest heat, then add the onion and garlic and fry until the onions have gone soggy (watch it, it spit's!!). Next add the peppers, Tomato, mushroom and wine and leave until it starts boiling again, then turn it down to simmer but keep stirring it (bit's can stick to the bottom of the pan). Once some of the water has come out of the onions, tomato etc (5-10mins) then give the tomato sauce bottle a good squeeze, 2-3 seconds on the salt and pepper grinders, splash of worcester, paprika and the tea bag thingy then on with the lid. Open a can/bottle, sit back and relax!!! you just need to stir it every now and then. It's probably cooked in about 30 mins but I left it simmering for about an hour. Crispy roast potato's and veg of your choice (I just used one of them steam and serve bags) Voila, the tastiest rabbit recipe I've made up in a long while! Enjoy, Luke Edited: I forgot the mushroom!
