pie-eater 377
Ive been thinking about that myself. Did you see one of Hugh Fearnleys programs where he made the rabbit haggis? I might give that a go.
Mister Gain 1,764
I was actually thinking of making some rabbit faggots, using the livers, hearts and kidneys, which we generally discard when gutting in the field. Would have to use a bit of belly pork, along with the rabbit meat, to add a bit of fat, but I reckon they are worth a try. I've been using the kidneys addrd into a cajun rabbit jambalaya, to take hunting.. Told my mate they were the buck rabbits bollocks, he liked them..
robbo 868
I eat them regularly mate . just make sure you remove the small sack of liquid that is in the slit on the back of the liver before you eat them. They have a more crumbly texture than pigs or ox liver.
Frann 882
Rabbit faggots? Interesting, I love the recipes and ideas on this forum
jonah. 775
marinade them in a chili and citrus based sauce (not too long time wise, the chili starts to break the liver down if you leave them in too long). Nando's bottled marinade from asda is a good start if you cant be arsed to make your own marinade, then fry/grill/or oven bake, serve them with a bit of salad and some crusty bread, great little starter and piss easy, works as well with chicken liver.
