If they're wild caught you need to let them swim in fresh, clean, water for a day, or so. It cleans the shitty muddy taste out of the flesh. Hugh Whittingstall said something similar a few years ago but it seems to hold strong. If you can get past the eating with your eyes stage, you'll eat well. Eat cheap too. Indeed Chris ! Carp is a delicacy for Jewish New Year, and in many traditional Jewish homes you'll find a carp swimming in the bath, being purged in the clean water.
