I do miss my tea and bacon sarnies (nobody does those like us Brits) but its nice to try different stuff. I had a full lambs head in Greece once, eyeballs and all It was lovely! Theres a guy down south rearing organic carp for the table in stock ponds,he feeds them on cow/horse shite Years ago all carp were fully scaled like commons until the monks bred strains without scales(leathers)to make them easier to prep for the table,mirrors are the "wastage" between the two Quote Link to post Share on other sites

If they're wild caught you need to let them swim in fresh, clean, water for a day, or so. It cleans the shitty muddy taste out of the flesh. Hugh Whittingstall said something similar a few years ago but it seems to hold strong. If you can get past the eating with your eyes stage, you'll eat well. Eat cheap too.
