The usual way of planting overwinter beans is to make a mound like as if your earthing up potatoes and plant the beans on the mound. It stops the roots from rotting if we have a wet winter and dont be tempted to plant them too early. When the beans have finished dont pull the roots out of the ground leave them in to rot as the roots contain nodes that help fix nitrogen in the soil. Try and make sure that the garlic has good drainage in the soil too, otherwise they rot in wet winters. As has been said, get some seed catalouges D T Browns, Marshalls they will all give you ideas.
