kenj 131
I use a patio chimenea heater for smoking my trout. If you have one it's dead easy and delicious. My mat went out and bought one, after tasting mine. Checkout my blog for pictures and the recipe. The trout tastes as good as it looks! http://www.urbanfieldsportsman.com/index.php/hot-smoked-trout-in-a-chimenea/
armdog 196
have hot smoked food in commercial kitchens , take a gastro tray( just a big roasting tin) put tea bags and wood shavings in tray, then a steamer tray fits in, put ya food in, foil it over and put it in a low oven, have done this with pigeon breast and fish at work, but on a smaller scale at home ( misses wasnt best pleased as i stank the house out)
Mister Gain 1,764
Made a smoker out of a 2 drawer filing cabinet a few years back, still going strong. It has a hole cut in the bottom for a gas burner for hot smoking, and a flap drops down to cover the hole for cold smoking... for stuff like home made bacon, cheese etc. The cold smoker is a CSG (cold smoke generator) http://www.macsbbq.com/cold-smokers it gives a 10 hour smoke. Sternyboy 4
I've been thinking about making a cold smoker, hopefully I'll get it done this week and get some pics of the process for you all
