low plains drifter 10,599
I was having a look at the victorinox butchery knives, used to use them when I worked as a butcher, reasonably priced, wish I had bought a set of them instead of my £ 60 buck knife, could have had a boning knife, steak knife and a cleaver for about the same price, live and learn lol Edited June 12, 2013 by low plains drifter 1 Quote Link to post
low plains drifter 10,599
As for taking the breasts from a pigeon, make a small cut under breast bone, put two fingers in pull both breasts backwards, they will come clean out, skinned and ready for the pot 2 Quote Link to post

Some photos would be good.........and a Youtube video would be better. I certainly know that I would appreciate learning an easier way to breast pigeons. 2 Quote Link to post

jonah. 775
you wont go far wrong with a mora companion, stainless blade if your prone to leaving it a bit mucky, but the carbon does take an edge better. you dont need a knife for breastin pigeons though..... pull the head off twist the wings off at the base joint where it meats the breast, holding the wing between your thumb and forefinger and twist the bird, as if your screwing it out put both thumbs into the neck cavity, 1 facing the birds spine the other facing the breast (keel) pull apart and roll the fat part of the breast towards the birds feet, as you roll it over pushing the pointy breast up towards the neck it shoul come away in your hand skinless you should have a pigeon crown left now, run your fingers under the thin part of the breast, between that and the rib cage and you'll find its now just joined down the main breast bone, pull it off, bone less pigeon breast! just realised that may be hard to follow, but its a piece of piece when you've done it once, there may be a video on youtube of it.... 1 Quote Link to post

kernow shooter 3
Well to be honest I have never heard of that way at all, I just pluck the breast slit the skin down the bone and take out both breasts, prob takes a bit longer but not messy though 1 Quote Link to post
