You can diversify the ingredients according to your imagination and whatever’s to hand. 4 large open mushrooms 1 egg 1 small ripe tomato, skinned & chopped 1oz fresh bread 4 tbsp freshly grated parmesan 1 clove garlic 1 tbsp finely chopped parsley Salt & freshly ground pepper 1 tbsp dry bread crumbs 2 tsp olive oil Preheat the oven to No7/245°F/220°C. Clean mushrooms, detach stalks & chop them coarsely. Prepare the filling, first beat the egg and add to it the chopped mushroom stalks, chopped tomato, roughly broken up bread, parmesan, chopped garlic, parsley, salt & pepper and finally 1 tsp olive oil. Mix well together and fill the mushroom cups with the mixture. Oil a baking tray and place the mushrooms side by side. Sprinkle dry breadcrumbs over the mushrooms and trickle with olive oil.
