Take the gills out of them. Turn them over open up the gill cavity and scrape the dead mans fingers out. It's the bacteria in the gills that make them go bad.

As a bye the cock crabs will be starting to moult any time now. Time to get your traps down in the estuaries.

Edited to add:

If you freeze them mounted on a hook then individually wrap them in clingfilm, they can be used when still frozen and will thaw out in the water. Keep them in a food flask till needed when you go out.

Spot on advice mate

I worked in the angling centre not long after leaving school, used to keep all the bait, as you said the key is taking the gills out if your going to freeze them, I used to fully peel them, remove the gills, put them in freezer bags 6 to a bag and Lay the bah flat so there was a little space between each crab. I'd then put the nozzle of a Hoover in the bag and suck all the air out, tie the bag tight and freeze ( vacuum packed lol).. They were fine like this.... Freeze crabs fresh, don't let them start to go then freeze they aren't half as good... Nothing beats fresh though..!!

Edited to add I pay 50p a crab..
