I never hang game, I'm no a fan of very strong meat, so fresh is best for me. I always aim to have my quarry from field to freezer in under 5hrs, if its a short day in the field. Certainly no less than 12hrs in hot weather. Large quarry like deer need to be bled. If the kills fresh, I just hang it, cut its throat & bleed it out for a couple of hours, if its a day or 2 old, much more care needs to be taken. The main thing is to get the intestines out ASAP & put it in a mesh fly net, to keep the carcass from being laid in. This one was in excellent condition. No leg damage, a small rupture to the groin & an impact injury to its neck. I gutted the animal as you would a rabbit, & put a bin liner in an old style empty plastic dust bin. The intestines go in there. I kept the liver. Heart & lungs were only good for pet food. I wasn't interested in the pelt until phantom, said could he have it, along with the head, so the skin was cut into several pieces as I skinned it down. Taking the head off at the base of the skull cos there's loads of meat on the neck, I then cut the legs off at the base of the meat, to avoid a long bone making freezing awkward. Your basically then left with a spinal section, rib cage & the legs. Removing the legs I just cut round the seam of the muscle adjoining the torso & cut right through to the socket joint. Crude but dislocate this & cut through any remaining tendon / ligament tissue & remove the leg. Tidy up / trim when off, as required. Do that x4, front legs much less work than hind quarters. Then it's a case of stripping down the neck, spine, ribs etc. the saddle on a deer is beautiful meat, and on an animal like this about 2&1/2 ft long on both side of the spinal chord. Take this off with care & cut into portions. The rest then get chopped down & I whack it straight into my slow cooker & stew the meat off the bone, to get the most off the it. It's simple but effective. The principle of dealing with a quadrapod animal are pretty similar, be that a rabbit, a hare or a deer. Just portions are much bigger obviously! I'm having problems uploading photos from the ipad, because of size, but it doesnt allow you to make em smaller either.. Had to use the slowly dying laptop... i have the same problem using photos from my iPhone mate, ive even tried cropping the photo's on iPhoto on my macbook pro and they are still to large to upload Still, its our own downfall i suppose as we like phones that take great pics but then can't use them! lol Hav a look in the app store mate there may be an app that alwoys you to alter pics and maybe downgrade there pixels etc, not sure but its worth a try!
