villaman 9,982 Posted October 18, 2012 Report Share Posted October 18, 2012 Hi Try this Rabbit saltimbocca Rabbit saltimbocca Saltimbocca is traditionally made using veal, prosciutto and sage. This recipe uses rabbit, bacon and sage, for a quick, easy and extremely tasty supper. Ingredients 2 rabbit fillets 2 slices back bacon 2 fresh sage leaves 1 tbsp olive oil 150ml/5fl oz beer or white wine Preparation method 1.Place the rabbit fillets between two pieces of cling film and bash lightly with a meat hammer or rolling pin until ½cm/¼in thick. 2.Remove the cling film and place the bacon and sage leaves in between the fillets. Season with salt and freshly ground black pepper. 3.Heat the oil in a lidded frying pan and fry the rabbit fillets for 3-4 minutes on each side, or until golden-brown. Pour over the beer or wine and bring to the boil. Reduce the heat to a simmer, cover and cook for another 10 minutes. 1 Quote Link to post Share on other sites
Tiercel 6,986 Posted October 18, 2012 Report Share Posted October 18, 2012 (edited) This is one I love. It is best to use young rabbits for this recipie, as they do not take as long to cook. Take 3 or 4 back legs of rabbit wrap in smoked streaky bacon place in a dish on a bed of mushrooms and onions. Or you can just use the back legs and saddle as I have here. Cook over a moderate heat for 35 minutes or untill the bacon is crispy. Take the legs out of the dish and drain all the juices that are in the dish leaving the onions and mushrooms. Make up the Colemans barbque sauce as directed and pour over the rabbit legs and cover the legs with greated cheese. Put it back in the oven for and other 20 minutes or untill the cheese has browned. always hunting 3 Posted December 27, 2012 Report Share Posted December 27, 2012 get ur rabbit pieaces put it in a baking tray chop up a couple of onions put them in add some mushrooms mix together. add two oxo cubes and a little water cover with tin foil when nearly cooked remove foil bk in oven to brown off. job done Quote Link to post Share on other sites
