Tug 168 Posted September 29, 2012 Report Share Posted September 29, 2012 (edited) Lie the pheasant on it's back and open its wings. Stand on the wings as close to the body as you can then take hold of the legs and pull up firmly but steadily (easier when still warm). This pulls the bird away from the crown (breast on breastplate with wings attached). Cut the wings off the crown and either cook it whole or cut the breast meat off. Chuck the rest in to the ferts.
