inan 841 Posted September 16, 2012 Report Share Posted September 16, 2012 Just been and picked up a mixed box of chook carcases, wings, lamb ribs, lamb tops, beef trimmings, off cuts of liver etc etc: one of the many advantages of having a village butcher: and all for free, though we do supply him with rabbits throughout the winter, in exchange for which we get what we want from his shop, but especially whole breast of lamb: lovely cut into ribs, splash of balsamic vinegar, salt and garlic, very slow roasted in the oven, and all that lovely fat to cook with afterwards: does it get any better? I got a box of chicken carcasses, and a bag of chicken fat free ,yesterday Magwitch will be mincing it in with the Thursday night bunnies. My 4 dogs had a whole chicken each last night as they were slightly aromatic. We get plenty of white meat , but are having a problem sourcing red muscle meat cheaply. The reason for mincing is to add the fat of the chickens to the lean meat of the bunnies ,plus I add raw veg that has been wizzed in a blitzer, porridge, brown rice ,bit of pasta, a couple of tins of sardines, and several par- boiled eggs a week. The main consideration however is space. I have 3 outside freezers ,and Magwitch has a huge chest freezer, but you try finding room for up to 50 bunnies after a night out. On the other hand, once minced they pack neatly down into less than a third of the room whole carcasses take up. Plus we have found, rabbits with their jackets on take longer to freeze.
